We at Rose Hill Enterprises ship our Ginger products on a weekly basis to co-packers through the country.

“Our definition of a contract packer, or co-packer, is a company that manufactures and packages foods or similar products for their clients.

To market and distribute, a co-packer works under contract with the hiring company to manufacture food as though the products were manufactured directly by the hiring company.”

Traditionally co-packers tend to purchase their product of choice in large quantity, however we are more than willing to work with you for smaller runs. Sometimes a product line starts off small and within a short period of time the product becomes popular and you the rest of the story.

Stem Ginger in Syrup

Ginger in Syrup is made from the stem and the root of the ginger plant.  This ginger is cooked and preserved in syrup of sugar and water still retaining the characteristic hot flavor of ginger.

In the sugar syrup this ginger has the texture of a canned peach or pear and can eaten right out of the jar, chopped over ice cream or mixed with cream cheese or a filling or spread.

Ginger in sweet syrup is also frequently used as an ingredient for moist gingerbread or cookies.  The soft texture is perfect for cheesecakes, beverages, syrups, sauces, chutneys, jams and more.

Candy manufacturers use the balls and bars for dipping and panning in chocolate and the dices (3-8mm, 6-8mm and 3-30mm) are used as filling to chocolate candies.

Stem Ginger in Syrup, also known referred to as wet ginger, can be sweet in syrup or pickled in a sweet-sour syrup.  The sweet sour ginger is not pickled as a sushi ginger but it does have a more pungent taste.

Crystallized Ginger Chicken

Delicious chicken with lovely flavors

4 teaspoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
12 ounces boneless skinless chicken breast — cut into 1″ cubes
1 tablespoon minced garlic
1 tablespoon canola oil
1 cup low-sodium chicken broth
1/4 cup crystallized ginger — slivered
2 teaspoons reduced-sodium soy sauce
1 pound sweet potatoes — cut into 3/4″ cubes
1 green bell pepper — cut into 1/8″ wedges
1 tablespoon chopped fresh cilantro

In a shallow dish, combine flour, salt, and black pepper. Dredge chicken in seasoned flour; shake off excess.

In a large wok or skillet over medium-high heat, cook garlic in hot oil about 10 seconds. Add chicken and stir-fry 2-3 minutes, or until light golden.

Remove chicken to a plate. Add broth, ginger, soy sauce, and sweet potato to the wok and bring to a boil. Cover, reduce heat to low, and simmer 10 minutes, or until potato is just tender.

Return broth to a boil.

Add green pepper and chicken and cook, stirring, 2 minutes or until chicken is just cooked through and sauce has thickened slightly.

Sprinkle with cilantro.

Ginger Biscotti

Unlike traditional biscotti, these won’t break your teeth. They are more like ginger molasses cookies in biscotti form, with big chunks of chewy, crystallised ginger and toasted almonds.

Makes 16

120g butter, softened
130g brown sugar
2 eggs
2 tbsp treacle
270g plain flour
1½ tsp baking powder
¼ tsp salt
2 tbsp ground ginger
2 tsp fresh ginger, peeled and grated
110g crystallised ginger, chopped
80g flaked almonds, toasted

1 Preheat the oven to 350F. Cream the butter and brown sugar together until light and fluffy.

2 Add the eggs one by one, beating after each egg, then drizzle in the treacle. Beat together well.

3 In a separate bowl, mix together the flour, baking powder, salt and powdered ground ginger. Add this to the wet ingredients and then stir in the fresh ginger, crystallised ginger and toasted almonds.

4 Form the mixture into two logs of dough (each log should be about 20cm long and 5cm wide). Place the logs on a lined baking tray and bake for 30 minutes, then leave them to cool for around 5 minutes.

5 Carefully slice the logs into biscotti (the dough might still be a little crumbly), then turn each one over on its side and bake for another 10-12 minutes. Leave to cool.

CHINROSE® Ginger

 

 

Ginger Caked with Crystallized Ginger

Ingredients
1/4 cup dark rum or water
1/2 cup golden raisins
1/4 pound (1 stick) unsalted butter
1 cup unsulphured molasses
1 cup (8 ounces) sour cream
1 1/2 teaspoons grated orange zest
2 1/3 cups all-purpose flour
3/4 teaspoon baking soda
2-4 Cubes of Crystallized Ginger (diced finely)
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon kosher salt
1/3 cup minced dried crystallized ginger (not in syrup)
1/2 cup confectioners’ sugar, optional
2 tablespoons plus 1 teaspoon freshly squeezed orange juice

 

Directions
Preheat the oven to 350 degrees F. Grease an 8 by 8-inch cake pan and line with parchment paper. Grease and flour the pan.

Place the rum and raisins in a small pan, cover and heat until the rum boils. Turn off the heat and set aside. Place the butter and molasses in another small pan and bring to a boil over medium heat. Pour the mixture into the bowl of an electric mixer fitted with the paddle attachment. Cool for 5 minutes, then mix in the sour cream and orange zest.

Meanwhile, sift the flour, baking soda, ginger, cinnamon, cloves, and salt together in a small bowl. Mix with your hands until combined. With the mixer on low speed, slowly add the flour mixture to the molasses mixture and mix only until smooth. Drain the raisins and add them and crystallized ginger to the mixture with a spatula. Pour into the prepared pan and bake for about 35 minutes, until a toothpick comes out clean. Set aside to cool completely.

When the cake has cooled, whisk together the confectioners’ sugar and orange juice and pour it onto the gingerbread, allowing it to drip down the sides. Allow the glaze to set. Cut the gingerbread into 9 squares.

Ginger Truffles made with Crystallized Ginger

Ingredients

1 cup (8oz) Thai Style Coconut Milk
2 packed teaspoons (.4 oz) finely grated fresh ginger
13 1/2 ounces bittersweet chocolate, finely chopped

1 pound Tempered Chocolate for dipping

Method

Line  a shallow baking pan with plastic wrap leaving enough hanging over the sides to cover the ganache once it is in the pan.

Place the chocolate in a medium heatproof bowl in a wide skilled or barely simmering water and stir frequently until most of the chocolate is melted. This can also be done in a microwave at 50% power. Microwave for 1 ½ minutes then stir. Continue microwaving in 30 second intervals, stirring after each one, until most of the chocolate is melted. Remove chocolate from heat and stir until smooth.  Set aside.

Combine the coconut milk and ginger and bring the coconut milk mixture to a boil. Remove from the heat and let it stand for 3 minutes to cool slightly. Pour the hot coconut milk over the chocolate and whisk briskly keeping the whisk in contact with the bottom or sides of the bowl to reduce splashing. Whisk until the coconut milk is completely mixed with the chocolate. Once the ganache is mixed it should be smooth and glossy and slightly thickened like pudding. Do not mix it beyond this point. Immediately scrape the ganache into the lined pan and let cool at room temperature, without stirring or disturbing it.

Once the ganache is cool fold the plastic wrap over it and let set at room temperature for at least several hours, preferably overnight, until firm enough to scoop. Once the ganache has set it can be refrigerated for a day or two or frozen for up to 2 months.
To shape the truffles use a small ice cream scoop or melon baller to form ¾ to 1 inch balls of ganache. Don’t worry about making perfect balls at this point, the goal is to make them all the same size. Let the ganache balls sit for a few minutes, then roll the ganache into smooth even balls. (If your hands run hot, like mine do, you will need to wipe your hands well between every few balls because the melted ganache that remains on your hands makes it hard to roll smooth balls of ganache.)

Melt and temper the additional chocolate. Line a cookie sheet with parchment paper To finish the truffles place a small amount of chocolate in one hand. Pick up one uncoated truffle and roll it in the chocolate on your hand until completely coated. The goal is to get a thin coating with no holes over the entire truffle. Transfer to the cookie sheet or plate. Top with the crystalized ginger. Repeat with the remaining truffles. Let sit until set, and then store in an airtight container.

Makes approximately four dozen truffles

Ginger Cookies with Stem Ginger

A simple receipt to follow with guaranteed results.

4 oz Butter
2 Tablespoons syrup
1 oz Sugar
2 oz CHINROSE® Stem ginger
6 oz Self-raising flour
1 Teaspoon of ground ginger

Chop the CHINROSE® Stem Ginger into small pieces.

Put the butter, syrup and sugar in a saucepan and heat gently until the butter has melted and the sugar dissolved.

Remove from the heat.

Stir in the flour, ground ginger and chopped stem ginger. Mix thoroughly. It should form a soft dough that leaves the sides of the pan clean.

Put teaspoonfuls of the mixture onto a greased baking tray, spaced about 1 inch apart to allow room for the cookies to spread as they cook. (~30 biscuits)

Bake at about 375 for about 15 minutes until the biscuits are golden brown and set.

Remove from the tray and cool on a wire rack.

Store in an airtight tin. If they get the chance, they keep for up to 2 weeks.
