Enjoy CHINROSE® Crystallized Ginger

Whenever I east some CHINROSE® Crystallized Ginger I develop this “numbing” feeling in my mouth for all of 5 seconds.

I know that my sensory system is at work.

It seems as if it were only yesterday that I bit into my 1st cube of  of CHINROSE® Crystallized Ginger. Well that was many years ago and now I enjoy my ginger right out of the bag or in my tea.

It’s good for you and man it tastes great.

 

 

 

 

Ginger Bars with Chinrose Crystallized Ginger

This is what you will need to make your ginger bars:

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground cinnamon
  • 2 sticks (1 cup) unsalted butter, softened
  • 1 cup sugar
  • 1/2 cup unsulfured molasses
  • 1 large egg
  • 3 ounces crystallized CHINROSE® ginger, chopped coarse (about 1/2 cup)
  • 1 1/2 tablespoons freshly grated orange zest

 

On a sheet of wax paper pat dough into an 8-by-5 inch rectangle, about 1 inch thick.

It is best to chill dough, wrapped in wax paper, 4 hours, or until firm.

After the dough has been formed into a rectangle it can be kept in the refrigerator for one week or the freezer for one month.

Thaw the frozen dough in the refrigerator until sliceable, about four hours.

The baked cookies keep in airtight containers at room temperature for four days.

Preheat oven to 350° F. and lightly butter 2 baking sheets.

Cut dough crosswise into slices about 1/6 inch thick and arrange about 2 inches apart on baking sheets.

Bake bars in batches in middle of oven until deep golden brown, 8 to 10 minutes, and transfer to racks to cool.

The baked cookies keep in airtight containers at room temperature for four days.

  • 1/2 cup dried sweet cherries
  • 1/2 cup dark chocolate chips
  • 1 cup roasted, unsalted cashews
  • 3/4 cup roasted, unsalted almonds

Directions

  • Mix it all up, and munch!

Not well – consider nibling on ginger

We’ve all experienced unrelenting nausea at some point or another. Your first instinct may be to turn to over the counter medications; however, ginger works as a simple, effective antidote.

Arabic, Indian, and Asian healers prized ginger as food and medicine. This tropical plant, in the same bo­tanical family as turmeric and cardamom, was effectively used to relieve nausea and vomiting caused by illness and seasickness.

Thanks to the spice trade, the tradition caught on in Europe. As one sixteenth-century physician put it: “Ginger does good for a bad stomach.” In The Family Herbal from 1814, English physician Robert Thornton noted that “two or three cupfuls for breakfast” will relieve “dyspepsia due to hard drinking.”

Modern research later confirmed that ginger reduces nausea and vomiting from multi­ple causes: morning sickness, postoperative upset, chemotherapy treatments, and motion sickness.

The studies on whether or not ginger prevents motion sickness are mixed. One study found ginger to be as effective, with fewer side effects, as dimenhydrinate (Dramamine). Other studies indicate that, when added to antinausea medications, it further reduces nau­sea and vomiting from chemotherapy.

While the best-researched use of ginger is in combating nausea and vomiting, studies have shown that ginger is a multi-faceted remedy with at least six more healing effects:

  1. It reduces pain and inflammation, making it valuable in managing arthritis, headaches, and menstrual cramps.
  2. It has a warming effect and stimulates circulation.
  3. It inhibits rhinovirus, which can cause the common cold.
  4. It inhibits such bacteria as Salmonella, which cause diarrhea, and protozoa, such as Trichomonas.
  5. In the intestinal tract, it reduces gas and painful spasms.
  6. It may prevent stomach ulcers caused by nonsteroidal anti-inflammatory drugs, such as aspirin and ibuprofen.

You can take ginger in whatever form appeals to you.

If you’re pregnant: Try it in tea, soup, or capsules — up to 250 milli­grams four times a day. If you chose a carbonated beverage, make sure it’s made from real ginger. You can also nib­ble crystallized ginger.

To counter motion sickness: Taking 1 gram of dried, powdered, encapsulated ginger 30 minutes to two hours before travel can help ease travel related nausea.

For postoperative nausea: In a recent study on the use of gin­ger to thwart postoperative nausea, the dose was 500 milligrams 30 minutes before surgery and 500 milligrams 2 hours after surgery. Otherwise, ginger is usually not recommended during the seven to ten days leading up to surgery because of its ef­fect on blood clotting. Discuss the use of ginger with your surgeon or anesthesiologist before trying it.

Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon kosher salt
1 cup dark brown sugar, lightly packed
1/4 cup vegetable oil
1/3 cup unsulfured molasses
1 extra-large egg, at room temperature
1 1/4 cups chopped crystallized ginger (6 ounces)
Granulated sugar, for rolling the cookies

Directions
Preheat the oven to 350 degrees F. Line 2 sheet pans with parchment paper.

In a large bowl, sift together the flour, baking soda, cinnamon, cloves, nutmeg, ginger, and salt and then combine the mixture with your hands. In the bowl of an electric mixer fitted with the paddle attachment, beat the brown sugar, oil, and molasses on medium speed for 5 minutes. Turn the mixer to low speed, add the egg, and beat for 1 minute. Scrape the bowl with a rubber spatula and beat for 1 more minute. With the mixer still on low, slowly add the dry ingredients to the bowl and mix on medium speed for 2 minutes. Add the crystallized ginger and mix until combined.

Scoop the dough with 2 spoons or a small ice cream scoop. With your hands, roll each cookie into a 1 3/4-inch ball and then flatten them lightly with your fingers. Press both sides of each cookie in granulated sugar and place them on the sheet pans.

Bake for exactly 13 minutes. The cookies will be crackled on the top and soft inside. Let the cookies cool on the sheets for 1 to 2 minutes, then transfer to wire racks to cool completely.

CHINROSE Stem Ginger in Syrup

CHINROSE Ginger in Syrup is made from the stem and the root of the ginger plant.

Cooked and preserved in syrup of sugar and water, the ginger balls retain the characteristic hot flavor of ginger.

Often referred to as wet ginger, this ginger can be sweet in syrup or pickled in a sweet-sour syrup.  The sweet sour ginger is not pickled as a sushi ginger but it does have a more pungent taste.

Candy manufacturers use the balls and bars for dipping and panning in chocolate and the dices are used as filling to chocolate candies.

Ginger condiment

Joel and Amy shared one of their favorite recipes for our Stem Ginger in Syrup.

This is a condiment for fish but is also excellent with goat cheese, feta or just cream cheese and roasted garlic.

  • ¼ cup minced shallot
  • 1tablespoon finely grated stem ginger
  • 1 large clove garlic, minced
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon dried hot red pepper flakes
  • 2 tablespoons butter
  • 1 tablespoon sugar
  • 1½ lb plum tomatoes seeded and finely chopped
  • 1½ tablespoons fresh lime juice
  • 2 tablespoons finely chopped cilantro

Cook shallots, ginger, garlic salt black pepper and red pepper flakes in butter in 10 inch skillet over moderately low heat, stirring until shallots are softened, about 5 minutes.

Add sugar and cook stirring until dissolved.

Add tomatoes and simmer over moderate heat stirring occasionally until thickened about 10 to 15 minutes.

Cool jam to room temperature, then stir in lime juice and cilantro.

Adding ginger to your favorite lemon bar recipe

Ginger and lemon have always been a great culinary combination.

Try adding ginger to your favorite lemon bar recipe.  It takes more ginger than you may expect to emerge over the lemon.

I find using the stem ginger is much easier than using the crystallized ginger.  The stem ginger has the consistency of a canned peach or canned pear.  You can use a garlic press for a paste of ginger or your grater for larger pieces.

Since lemon bars have a shortbread base, remember to add crystallized ginger to your next shortbread recipe.
